Pasta

  • 12 oz spaghetti

Sauce

  • 4 oz pancetta diced
  • 2 eggs
  • 1 cup Parmesan cheese grated
  • 1 tsp black pepper
  • 1 tsp salt

Instructions
 

  • Cook spaghetti in salted boiling water until al dente.
  • Sauté pancetta until crispy. Remove from heat.
  • Whisk eggs, Parmesan, and black pepper in a bowl.
  • Drain pasta, reserving 0.5 cup water. Add pasta to pancetta, then egg mixture, tossing quickly.
  • Add reserved water to adjust consistency. Serve immediately.
