Ingredients
  

Soup

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can pumpkin puree 15 oz
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp ground nutmeg
  • 0.5 tsp salt

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft, about 5 minutes.
  • Add pumpkin puree, vegetable broth, nutmeg, and salt. Simmer for 20 minutes.
  • Blend the soup until smooth using a blender.
  • Return to pot, stir in heavy cream, and heat through.
  • Serve warm with a sprinkle of nutmeg.
