Instructions
Preheat oven to 325°F (165°C).
Pat the turkey dry with paper towels and place it breast-side up in a roasting pan.
12 lb Whole turkey
Rub the turkey with softened butter and olive oil, then season generously with kosher salt and black pepper, inside and out.

Place the onion, lemon, and thyme sprigs inside the turkey cavity.

Pour chicken broth into the bottom of the roasting pan.
