Ingredients
  

Pasta

  • 12 oz orecchiette pasta
  • 1 tbsp salt for pasta water

Sauce

  • 1 lb Italian sausage casings removed
  • 2 tbsp olive oil
  • 2 cups kale chopped
  • 2 cloves garlic minced
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt

Instructions
 

  • Boil a large pot of water, add salt, and cook orecchiette according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 5 minutes, breaking it up as it cooks.
  • Add garlic, kale, and red pepper flakes, cooking for 5 minutes until kale is wilted.
  • Toss orecchiette with sausage mixture and serve with grated Parmesan.

Notes

Use spicy sausage for extra kick. Add lemon juice for brightness.
