Orecchiette with Broccoli Rabe

Ingredients
  

Pasta

  • 12 oz orecchiette pasta
  • 1 tbsp salt for pasta water

Sauce

  • 1 bunch broccoli rabe trimmed and chopped
  • 2 tbsp olive oil
  • 3 cloves garlic sliced
  • 0.5 tsp red pepper flakes
  • 0.5 cup Parmesan cheese grated

Instructions
 

  • Boil a large pot of water, add salt, and cook orecchiette according to package instructions until al dente. Drain and set aside.
  • Blanch broccoli rabe in boiling water for 2 minutes, then drain.
  • Heat olive oil in a skillet over medium heat. Sauté garlic and red pepper flakes for 1 minute.
  • Add broccoli rabe and cook for 5 minutes until tender.
  • Toss orecchiette with broccoli rabe mixture, sprinkle with Parmesan, and serve.

Notes
