Instructions
Preheat oven to 375°F (190°C).
Roll out pie crust and cut into rounds to fit a mini muffin tin.
Press crust rounds into muffin tin cups.
Whisk eggs, heavy cream, cheddar cheese, spinach, and salt in a bowl.
Spoon filling into crusts, filling each about 3/4 full.
Bake for 20 minutes until set and golden.
Serve warm or at room temperature.
