Ingredients
  

Crust

  • 1 pie crust store-bought or homemade

Filling

  • 3 eggs
  • 0.5 cup heavy cream
  • 0.5 cup cheddar cheese shredded
  • 0.25 cup spinach chopped
  • 0.5 tsp salt

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Roll out pie crust and cut into rounds to fit a mini muffin tin.
  • Press crust rounds into muffin tin cups.
  • Whisk eggs, heavy cream, cheddar cheese, spinach, and salt in a bowl.
  • Spoon filling into crusts, filling each about 3/4 full.
  • Bake for 20 minutes until set and golden.
  • Serve warm or at room temperature.

Notes

Add bacon or ham for extra flavor. Let cool slightly before removing from tin.
