Jollof Rice

Ingredients
  

Rice

  • 2 cups long-grain rice

Sauce

  • 1 can tomatoes 14 oz, blended
  • 1 red bell pepper blended
  • 1 onion chopped
  • 2 tbsp vegetable oil
  • 1 tsp curry powder

Instructions
 

  • Blend tomatoes and bell pepper into a puree.
  • Heat oil in a pot, sauté onion until soft.
  • Add tomato puree and curry powder, cook for 10 minutes.
  • Add rice and 3 cups water, simmer for 25 minutes.
  • Serve with fried plantains.
