Slow-braised Italian veal shanks with gremolata.

  • 4 veal shanks

Sauce

  • 1 cup white wine
  • 1 cup beef broth
  • 1 onion chopped
  • 0.25 cup parsley chopped, for gremolata

Instructions
 

  • Brown veal shanks in a pot, remove.
  • Sauté onion, add wine and broth, bring to a simmer.
  • Return shanks to pot, braise for 2 hours at 325°F (165°C).
  • Mix parsley with lemon zest for gremolata.
  • Serve shanks with sauce and gremolata.
