Fusilli with Zucchini and Lemon

Ingredients
  

Pasta

  • 12 oz fusilli pasta
  • 1 tbsp salt for pasta water

Sauce

  • 2 zucchini sliced
  • 2 tbsp olive oil
  • 1 lemon zested and juiced
  • 0.5 tsp salt
  • 0.25 cup Parmesan cheese grated

Instructions
 

  • Boil a large pot of water, add salt, and cook fusilli according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Sauté zucchini for 5 minutes until tender.
  • Add lemon zest, lemon juice, and salt to the skillet.
  • Toss fusilli with zucchini mixture and sprinkle with Parmesan.
  • Serve immediately.
