  • 6 eggs
  • 2 zucchini sliced

Seasoning

  • 0.25 cup parmesan cheese grated
  • 2 tbsp olive oil
  • 1 onion chopped

Instructions
 

  • Sauté zucchini and onion in olive oil until soft.
  • Whisk eggs with parmesan, pour over vegetables.
  • Cook on low heat until set, about 10 minutes, then broil to brown top.
  • Serve with a side salad.
