Ingredients
  

Potato Skins

  • 4 russet potatoes
  • 2 tbsp olive oil
  • 1 cup cheddar cheese shredded
  • 4 bacon slices cooked and crumbled
  • 2 tbsp green onions chopped
  • 0.5 tsp salt

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Bake potatoes for 30 minutes until tender. Let cool slightly.
  • Cut potatoes in half, scoop out most of the flesh, leaving a thin layer.
  • Brush potato skins with olive oil, sprinkle with salt, and place on a baking sheet.
  • Bake for 10 minutes until crispy.
  • Sprinkle cheese and bacon on skins, then bake for 5 more minutes until cheese melts.
  • Top with green onions and serve with sour cream.
