Instructions
Preheat oven to 400°F (200°C).
Bake potatoes for 30 minutes until tender. Let cool slightly.
Cut potatoes in half, scoop out most of the flesh, leaving a thin layer.
Brush potato skins with olive oil, sprinkle with salt, and place on a baking sheet.
Bake for 10 minutes until crispy.
Sprinkle cheese and bacon on skins, then bake for 5 more minutes until cheese melts.
Top with green onions and serve with sour cream.
