Instructions
Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
In a bowl, sift flour and baking powder.
1.5 cup All-purpose flour,
1 tsp Baking powder
In another bowl, whisk eggs, sugar, coconut milk, lime juice, and zest.
1 cup Granulated sugar,
0.5 cup Coconut milk,
2 Large eggs,
0.25 cup Lime juice,
1 tbsp Lime zest
Combine wet and dry ingredients, then fold in shredded coconut.
0.5 cup Shredded coconut
Pour batter into pan and bake for 35-40 minutes.
Cool and drizzle with lime glaze.
