Coconut Lime Cake

Ingredients
  

  • 1.5 cup All-purpose flour sifted
  • 1 cup Granulated sugar
  • 0.5 cup Coconut milk
  • 0.5 cup Shredded coconut
  • 2 Large eggs
  • 0.25 cup Lime juice freshly squeezed
  • 1 tbsp Lime zest
  • 1 tsp Baking powder

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
  • In a bowl, sift flour and baking powder.

  • In another bowl, whisk eggs, sugar, coconut milk, lime juice, and zest.
    1 cup Granulated sugar, 0.5 cup Coconut milk, 2 Large eggs, 0.25 cup Lime juice, 1 tbsp Lime zest
  • Combine wet and dry ingredients, then fold in shredded coconut.
    0.5 cup Shredded coconut
  • Pour batter into pan and bake for 35-40 minutes.
  • Cool and drizzle with lime glaze.
