Ingredients
  

Vegetables

  • 1 large eggplant
  • 2 tomatoes chopped
  • 1 onion chopped

Spices

  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 2 tbsp vegetable oil

Instructions
 

  • Roast eggplant over an open flame or in a 400°F (200°C) oven for 20 minutes, then peel and mash.
  • Heat oil in a pan, add cumin seeds, and sauté until fragrant.
  • Add onion and cook until golden, then add tomatoes and garam masala.
  • Mix in mashed eggplant and cook for 10 minutes.
  • Serve with roti or rice.
