Instructions
Roast eggplant over an open flame or in a 400°F (200°C) oven for 20 minutes, then peel and mash.
Heat oil in a pan, add cumin seeds, and sauté until fragrant.
Add onion and cook until golden, then add tomatoes and garam masala.
Mix in mashed eggplant and cook for 10 minutes.
Serve with roti or rice.
