  • 1 eggplant sliced into 1/2-inch rounds

Coating

  • 0.5 cup breadcrumbs
  • 0.5 cup marinara sauce
  • 0.5 cup mozzarella cheese shredded

Instructions
 

  • Coat eggplant slices with breadcrumbs.
  • Preheat air fryer to 375°F (190°C).
  • Cook eggplant for 15 minutes, flipping halfway.
  • Top with marinara sauce and mozzarella, cook for 5 more minutes.
