Curry

  • 1 can coconut milk 14 oz
  • 2 tbsp green curry paste
  • 1 eggplant Thai, chopped
  • 1 tbsp fish sauce

Instructions
 

  • Sauté curry paste in a pot for 1 minute.
  • Add coconut milk and bring to a simmer.
  • Add chicken, eggplant, and fish sauce, cook for 20 minutes.
  • Serve with jasmine rice.
