Spaghetti Carbonara

Creamy pasta with eggs, pancetta, and Parmesan cheese.

Ingredients
Pasta
- 12 oz spaghetti
Sauce
- 4 oz pancetta diced
- 2 eggs
- 1 cup Parmesan cheese grated
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Cook spaghetti in salted boiling water until al dente.
- Sauté pancetta until crispy. Remove from heat.
- Whisk eggs, Parmesan, and black pepper in a bowl.
- Drain pasta, reserving 0.5 cup water. Add pasta to pancetta, then egg mixture, tossing quickly.
- Add reserved water to adjust consistency. Serve immediately.
Notes
Avoid overheating eggs to prevent scrambling.
