Ropa Vieja

Cuban shredded beef stew with peppers and olives.
Ingredients
Beef
- 1.5 lb flank steak
Sauce
- 1 cup tomato sauce
- 1 red bell pepper sliced
- 0.25 cup green olives
- 1 onion sliced
- 1 tsp cumin
Instructions
- Boil flank steak in water for 1 hour, then shred.
- Sauté onion and bell pepper in a pot until soft.
- Add tomato sauce, cumin, olives, and shredded beef, simmer for 20 minutes.
- Serve with rice and black beans.
Notes
Add capers for extra tang.
