Risotto alla Milanese

Creamy saffron-infused risotto from Milan.
Ingredients
Main
- 1.5 cup arborio rice
- 0.25 tsp saffron threads
Base
- 1 onion finely chopped
- 4 cup chicken broth warmed
- 2 tbsp butter
- 0.5 cup parmesan cheese grated
Instructions
- Sauté onion in butter until soft.
- Add rice and toast for 2 minutes.
- Stir in saffron and gradually add warm broth, stirring until absorbed, about 25 minutes.
- Stir in parmesan and serve immediately.
Notes
Add a splash of white wine for depth.
