Rendang

Indonesian slow-cooked beef in spicy coconut sauce.
Ingredients
Beef
- 1.5 lb beef chuck cubed
Sauce
- 1 can coconut milk 14 oz
- 2 lemongrass stalks bruised
- 2 tbsp tamarind paste
- 1 tbsp red chili paste
- 1 onion chopped
Instructions
- Blend onion, chili paste, and tamarind to make a paste.
- Brown beef in a pot, then add paste and lemongrass.
- Add coconut milk and simmer for 2 hours until tender.
- Serve with steamed rice.
Notes
Adjust chili paste for desired spice level.
