Mushrooms

  • 1 lb mixed mushrooms sliced
  • 2 tbsp olive oil
  • 0.5 cup parmesan cheese grated
  • 4 cup water

  • Boil water, whisk in polenta, simmer for 25 minutes, stirring.
  • Sauté mushrooms in olive oil until golden.
  • Stir parmesan into polenta.
  • Serve polenta topped with mushrooms.
