Penne alla Vodka

Creamy tomato-based pasta with a hint of vodka, perfect for a rich appetizer or main dish.

Ingredients
Pasta
- 12 oz penne pasta
- 1 tbsp salt for pasta water
Sauce
- 2 tbsp olive oil
- 1 onion finely chopped
- 2 cloves garlic minced
- 0.5 cup vodka
- 1 cup tomato puree
- 0.5 cup heavy cream
- 0.5 tsp red pepper flakes
- 0.5 cup Parmesan cheese grated
Instructions
- Boil a large pot of water, add salt, and cook penne according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft, about 5 minutes.
- Add vodka and cook for 2 minutes until reduced slightly.
- Stir in tomato puree and red pepper flakes, simmering for 5 minutes.
- Add heavy cream and stir until combined. Cook for 2 more minutes.
- Toss penne in the sauce, sprinkle with Parmesan, and serve immediately.
Notes
Adjust red pepper flakes for spice level. Garnish with fresh basil if desired.
