Orecchiette with Sausage and Kale

Hearty orecchiette pasta with spicy sausage and nutrient-rich kale.

Ingredients
Pasta
- 12 oz orecchiette pasta
- 1 tbsp salt for pasta water
Sauce
- 1 lb Italian sausage casings removed
- 2 tbsp olive oil
- 2 cups kale chopped
- 2 cloves garlic minced
- 0.5 tsp red pepper flakes
- 0.5 tsp salt
Instructions
- Boil a large pot of water, add salt, and cook orecchiette according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 5 minutes, breaking it up as it cooks.
- Add garlic, kale, and red pepper flakes, cooking for 5 minutes until kale is wilted.
- Toss orecchiette with sausage mixture and serve with grated Parmesan.
Notes
Use spicy sausage for extra kick. Add lemon juice for brightness.
