Orecchiette with Broccoli Rabe

Earthy orecchiette pasta with sautéed broccoli rabe and garlic, finished with Parmesan.

Ingredients
Pasta
- 12 oz orecchiette pasta
- 1 tbsp salt for pasta water
Sauce
- 1 bunch broccoli rabe trimmed and chopped
- 2 tbsp olive oil
- 3 cloves garlic sliced
- 0.5 tsp red pepper flakes
- 0.5 cup Parmesan cheese grated
Instructions
- Boil a large pot of water, add salt, and cook orecchiette according to package instructions until al dente. Drain and set aside.
- Blanch broccoli rabe in boiling water for 2 minutes, then drain.
- Heat olive oil in a skillet over medium heat. Sauté garlic and red pepper flakes for 1 minute.
- Add broccoli rabe and cook for 5 minutes until tender.
- Toss orecchiette with broccoli rabe mixture, sprinkle with Parmesan, and serve.
Notes
Add sausage for extra flavor. Adjust red pepper flakes for spice.
