Moroccan Lamb Tagine

Slow-cooked Moroccan lamb stew with apricots and almonds.
Ingredients
Main
- 1.5 lb lamb shoulder cubed
- 0.5 cup dried apricots
Spices and Base
- 1 onion chopped
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 0.25 cup almonds sliced
Instructions
- Brown lamb in a pot, remove and set aside.
- Sauté onion with cumin and cinnamon until soft.
- Add lamb, apricots, and 2 cups water, simmer for 2 hours.
- Stir in almonds and serve with couscous.
Notes
Add chickpeas for extra heartiness.
