Maple Roasted Acorn Squash

Sweet and savory acorn squash roasted with maple syrup, a perfect fall side.

Ingredients
Squash
- 2 acorn squash halved and seeded
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 0.5 tsp salt
- 0.5 tsp cinnamon
Instructions
- Preheat oven to 400°F (200°C).
- Cut acorn squash into wedges and toss with olive oil, maple syrup, salt, and cinnamon.
- Arrange on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Serve warm.
Notes
Garnish with fresh thyme. Add a sprinkle of brown sugar for extra sweetness.
