Mango Passionfruit Cake

A tropical layered cake with mango puree and passionfruit curd.
Ingredients
- 2 cup All-purpose flour sifted
- 1.5 cup Granulated sugar
- 0.5 cup Mango puree
- 0.25 cup Passionfruit juice
- 3 Large eggs
- 0.5 cup Butter melted
- 1 tsp Baking powder
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
- Sift flour and baking powder together.2 cup All-purpose flour, 1 tsp Baking powder
- Whisk eggs, sugar, mango puree, and butter until smooth.1.5 cup Granulated sugar, 0.5 cup Mango puree, 3 Large eggs, 0.5 cup Butter
- Fold in dry ingredients, pour into pan, and bake for 30-35 minutes.
- Cool and spread passionfruit curd between layers.0.25 cup Passionfruit juice
- Top with whipped cream and fresh mango slices.
Notes
Use ripe mangoes for best flavor.
