Fusilli with Roasted Red Pepper Sauce

Vibrant fusilli pasta tossed with a smoky roasted red pepper sauce.

Ingredients
Pasta
- 12 oz fusilli pasta
- 1 tbsp salt for pasta water
Sauce
- 2 roasted red peppers jarred or homemade
- 1 tbsp olive oil
- 1 clove garlic
- 0.5 cup heavy cream
- 0.5 tsp salt
Instructions
- Boil a large pot of water, add salt, and cook fusilli according to package instructions until al dente. Drain and set aside.
- Blend roasted red peppers, garlic, and salt in a blender until smooth.
- Heat olive oil in a skillet over medium heat. Add blended sauce and heavy cream.
- Simmer for 5 minutes until heated through.
- Toss fusilli in the sauce and serve with grated Parmesan.
Notes
Add smoked paprika for extra depth. Garnish with fresh parsley.
