French Coq au Vin

Classic French chicken stewed in red wine.
Ingredients
Chicken
- 1.5 lb chicken thighs
Sauce
- 1 cup red wine
- 1 cup chicken broth
- 1 onion chopped
- 0.25 cup mushrooms sliced
Instructions
- Brown chicken in a pot, remove.
- Sauté onion and mushrooms until soft.
- Add wine and broth, return chicken, simmer for 50 minutes.
- Serve with mashed potatoes.
Notes
Add bacon for extra flavor.
