Cotoletta alla Milanese

Breaded veal cutlet, pan-fried until golden.
Ingredients

- 1 lb veal cutlets pounded thin
- 1 cup breadcrumbs
Coating
- 2 eggs beaten
- 2 tbsp butter
- 2 tbsp olive oil
Instructions
- Dip veal in eggs, then coat with breadcrumbs.
- Heat butter and olive oil in a skillet, fry cutlets until golden, 3-4 minutes per side.
- Drain on paper towels.
- Serve with lemon wedges and arugula.
Notes
Use panko for extra crunch.
