Cavatappi with Sausage and Peppers

Flavorful cavatappi pasta with Italian sausage and colorful bell peppers in a tomato sauce.

Ingredients
Pasta
- 12 oz cavatappi pasta
- 1 tbsp salt for pasta water
Sauce
- 1 lb Italian sausage casings removed
- 2 tbsp olive oil
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 cup marinara sauce
- 0.5 tsp salt
Instructions
- Boil a large pot of water, add salt, and cook cavatappi according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 5 minutes, breaking it up as it cooks.
- Add bell peppers and sauté for 5 minutes until softened.
- Stir in marinara sauce and salt, simmering for 5 minutes.
- Toss cavatappi in the sauce and serve with grated Parmesan.
Notes
Use spicy sausage for extra heat. Garnish with fresh basil.
