Carrot Cake with Walnuts

A moist spiced cake packed with carrots and crunchy walnuts, topped with cream cheese frosting.
Ingredients
- 2 cup All-purpose flour sifted
- 1.5 cup Brown sugar
- 2 cup Grated carrots
- 0.5 cup Chopped walnuts toasted
- 3 Large eggs
- 0.75 cup Vegetable oil
- 1 tsp Cinnamon
- 1 tsp Baking powder
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
- In a bowl, mix flour, cinnamon, and baking powder.2 cup All-purpose flour, 1 tsp Cinnamon, 1 tsp Baking powder
- In another bowl, whisk eggs, sugar, and oil until smooth. Add carrots.1.5 cup Brown sugar, 2 cup Grated carrots, 3 Large eggs, 0.75 cup Vegetable oil
- Combine wet and dry ingredients, then fold in walnuts.0.5 cup Chopped walnuts
- Pour batter into pan and bake for 40-45 minutes.
- Cool and frost with cream cheese frosting.
Notes
Grate carrots finely for best texture.
