Brasato al Barolo

Beef braised in Barolo wine.
Ingredients
Main
- 2 lb beef roast
- 2 cup Barolo wine
Base
- 1 onion chopped
- 2 tbsp olive oil
- 1 carrot chopped
Instructions
- Brown beef in olive oil, remove.
- Sauté onion and carrot, add wine.
- Return beef, braise at 325°F (165°C) for 3 hours.
- Serve with mashed potatoes.
Notes
Use a good quality red wine.
