Air Fryer Veggie Stuffed Peppers

Bell peppers stuffed with a savory vegetable and quinoa mix.

- 4 bell peppers tops removed, seeded
- 1 cup quinoa cooked
Filling
- 1 cup zucchini diced
- 0.5 cup cherry tomatoes halved
- 0.25 cup feta cheese crumbled
Instructions
- Mix cooked quinoa, zucchini, cherry tomatoes, and feta in a bowl.
- Stuff bell peppers with the quinoa mixture.
- Preheat air fryer to 360°F (180°C).
- Cook peppers for 20 minutes, until tender and slightly charred.
