Air Fryer Eggplant Parmesan

Crispy eggplant slices topped with marinara and mozzarella.
Ingredients

- 1 eggplant sliced into 1/2-inch rounds
Coating
- 0.5 cup breadcrumbs
- 0.5 cup marinara sauce
- 0.5 cup mozzarella cheese shredded
Instructions
- Coat eggplant slices with breadcrumbs.
- Preheat air fryer to 375°F (190°C).
- Cook eggplant for 15 minutes, flipping halfway.
- Top with marinara sauce and mozzarella, cook for 5 more minutes.
Notes
