Panzanella

Tuscan bread salad with tomatoes and basil.
Ingredients
Main
- 4 cup stale ciabatta bread cubed
- 4 tomatoes chopped
Dressing
- 0.25 cup olive oil
- 2 tbsp red wine vinegar
- 0.25 cup fresh basil torn
Instructions
- Combine bread and tomatoes in a large bowl.
- Whisk olive oil and vinegar, pour over salad.
- Add basil and toss, let sit for 10 minutes.
- Serve fresh.
Notes
Add cucumber for extra crunch.
