Frittata di Zucchine

Italian zucchini frittata with parmesan.
Ingredients
Main
- 6 eggs
- 2 zucchini sliced
Seasoning
- 0.25 cup parmesan cheese grated
- 2 tbsp olive oil
- 1 onion chopped
Instructions
- Sauté zucchini and onion in olive oil until soft.
- Whisk eggs with parmesan, pour over vegetables.
- Cook on low heat until set, about 10 minutes, then broil to brown top.
- Serve with a side salad.
Notes
Add fresh herbs like parsley for extra flavor.
