Polenta con Funghi

Creamy polenta with sautéed mushrooms.
Ingredients
Polenta
- 1 cup polenta
Mushrooms
- 1 lb mixed mushrooms sliced
- 2 tbsp olive oil
- 0.5 cup parmesan cheese grated
- 4 cup water
Instructions
- Boil water, whisk in polenta, simmer for 25 minutes, stirring.
- Sauté mushrooms in olive oil until golden.
- Stir parmesan into polenta.
- Serve polenta topped with mushrooms.
Notes
Add thyme for extra aroma.
