Coconut Lime Cake

A tropical cake with coconut flavor and a zesty lime glaze, perfect for summer.
Ingredients
- 1.5 cup All-purpose flour sifted
- 1 cup Granulated sugar
- 0.5 cup Coconut milk
- 0.5 cup Shredded coconut
- 2 Large eggs
- 0.25 cup Lime juice freshly squeezed
- 1 tbsp Lime zest
- 1 tsp Baking powder
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
- In a bowl, sift flour and baking powder.1.5 cup All-purpose flour, 1 tsp Baking powder
- In another bowl, whisk eggs, sugar, coconut milk, lime juice, and zest.1 cup Granulated sugar, 0.5 cup Coconut milk, 2 Large eggs, 0.25 cup Lime juice, 1 tbsp Lime zest
- Combine wet and dry ingredients, then fold in shredded coconut.0.5 cup Shredded coconut
- Pour batter into pan and bake for 35-40 minutes.
- Cool and drizzle with lime glaze.
