Tiramisu Cake

A layered sponge cake soaked in coffee and layered with creamy mascarpone, inspired by Italian tiramisu.

Ingredients
  

  • 1.5 cup All-purpose flour sifted
  • 1 cup Granulated sugar
  • 4 Large eggs
  • 1 cup Mascarpone cheese
  • 0.5 cup Strong coffee cooled
  • 2 tbsp Coffee liqueur
  • 1 tsp Baking powder

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  • In a bowl, sift flour and baking powder.
    1.5 cup All-purpose flour, 1 tsp Baking powder
  • Beat eggs and sugar until pale and fluffy.
    1 cup Granulated sugar, 4 Large eggs
  • Fold in dry ingredients, pour into pan, and bake for 25-30 minutes.
  • Cool cake, then slice horizontally. Brush layers with coffee and liqueur mixture.
    0.5 cup Strong coffee, 2 tbsp Coffee liqueur
  • Spread mascarpone between layers and on top. Chill for 1 hour.
    1 cup Mascarpone cheese
