Stuffed Mini Bell Peppers

Colorful mini bell peppers stuffed with a creamy cheese and herb filling.

Ingredients
Peppers
- 12 mini bell peppers halved and seeded
- 8 oz cream cheese softened
- 0.5 cup cheddar cheese shredded
- 1 tbsp chives chopped
- 1 tsp garlic powder
- 0.5 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Mix cream cheese, cheddar cheese, chives, garlic powder, and salt in a bowl.
- Spoon or pipe the cheese mixture into the halved mini bell peppers.
- Arrange stuffed peppers on a baking sheet.
- Bake for 15 minutes until peppers are tender and filling is bubbly.
- Serve warm.
Notes
Add crumbled bacon for extra flavor. Serve with a side of ranch dressing.
