Crispy Potato Skins

Crispy potato skins loaded with cheese, bacon, and green onions.

Ingredients
Potato Skins
- 4 russet potatoes
- 2 tbsp olive oil
- 1 cup cheddar cheese shredded
- 4 bacon slices cooked and crumbled
- 2 tbsp green onions chopped
- 0.5 tsp salt
Instructions
- Preheat oven to 400°F (200°C).
- Bake potatoes for 30 minutes until tender. Let cool slightly.
- Cut potatoes in half, scoop out most of the flesh, leaving a thin layer.
- Brush potato skins with olive oil, sprinkle with salt, and place on a baking sheet.
- Bake for 10 minutes until crispy.
- Sprinkle cheese and bacon on skins, then bake for 5 more minutes until cheese melts.
- Top with green onions and serve with sour cream.
Notes
Save scooped potato for mashed potatoes. Serve immediately for best texture.
