Rigatoni with Sausage and Apple

Ingredients
Pasta
- 12 oz rigatoni pasta
- 1 tbsp salt for pasta water
Sauce
- 1 lb Italian sausage casings removed
- 2 tbsp olive oil
- 1 apple diced
- 2 cloves garlic minced
- 0.5 tsp salt
Instructions
- Boil a large pot of water, add salt, and cook rigatoni according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 5 minutes, breaking it up as it cooks.
- Add garlic and apple, cooking for 5 minutes until apples soften.
- Toss rigatoni with sausage mixture and serve with grated Parmesan.
Notes
Use a tart apple like Granny Smith. Add sage for extra fall flavor.
