Tortellini with Mushroom and Sage

Cheese tortellini with earthy mushrooms and sage, a cozy fall pasta dish.

Ingredients
Pasta
- 12 oz cheese tortellini
- 1 tbsp salt for pasta water
Sauce
- 1 lb mushrooms sliced
- 2 tbsp butter
- 10 fresh sage leaves
- 0.5 tsp salt
- 0.25 cup Parmesan cheese grated
Instructions
- Boil a large pot of water, add salt, and cook tortellini according to package instructions until al dente. Drain and set aside.
- Melt butter in a skillet over medium heat. Sauté mushrooms for 8 minutes.
- Add sage leaves and salt, cooking for 1 minute.
- Toss tortellini in the mushroom mixture and sprinkle with Parmesan.
- Serve immediately.
Notes
Use a mix of cremini and shiitake mushrooms. Add cream for a richer sauce.
