Peruvian Lomo Saltado

Peruvian stir-fried beef with fries and vegetables.
Ingredients
Main
- 1 lb sirloin steak sliced
- 2 potatoes cut into fries
Sauce and Vegetables
- 1 red onion sliced
- 1 red bell pepper sliced
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
Instructions
- Fry potatoes until crispy, set aside.
- Stir-fry beef in a hot pan for 3-4 minutes, remove.
- Sauté onion and bell pepper, add soy sauce and vinegar.
- Return beef and fries to pan, toss together.
- Serve with rice.
Notes
Add aji amarillo for authentic flavor.
