Thai Green Curry

Fragrant Thai curry with chicken and coconut milk.
Ingredients

- 1 lb chicken breast sliced
Curry
- 1 can coconut milk 14 oz
- 2 tbsp green curry paste
- 1 eggplant Thai, chopped
- 1 tbsp fish sauce
Instructions
- Sauté curry paste in a pot for 1 minute.
- Add coconut milk and bring to a simmer.
- Add chicken, eggplant, and fish sauce, cook for 20 minutes.
- Serve with jasmine rice.
Notes
Add bamboo shoots for texture.
