Bacalhau à Brás

Portuguese cod dish with eggs and potatoes.
Ingredients
Main
- 1 lb salted cod soaked and shredded
- 2 potatoes julienned, fried
- 4 eggs beaten
Seasoning
- 1 onion sliced
- 2 tbsp olive oil
- 0.25 cup parsley chopped
Instructions
- Fry julienned potatoes until crispy, set aside.
- Sauté onion in olive oil until soft.
- Add cod and cook for 5 minutes.
- Stir in eggs and potatoes, cook until eggs are set.
- Garnish with parsley and serve.
Notes
Soak cod for 24 hours, changing water frequently.
