Jollof Rice

Nigerian spicy rice dish with tomatoes and peppers.
Ingredients
Rice
- 2 cups long-grain rice
Sauce
- 1 can tomatoes 14 oz, blended
- 1 red bell pepper blended
- 1 onion chopped
- 2 tbsp vegetable oil
- 1 tsp curry powder
Instructions
- Blend tomatoes and bell pepper into a puree.
- Heat oil in a pot, sauté onion until soft.
- Add tomato puree and curry powder, cook for 10 minutes.
- Add rice and 3 cups water, simmer for 25 minutes.
- Serve with fried plantains.
Notes
Add chicken or beef for a heartier dish.
