Arista di Maiale

Roasted pork loin with fennel and garlic.
Ingredients
Main
- 2 lb pork loin
- 1 tsp fennel seeds
Seasoning
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 tsp rosemary
Instructions
- Rub pork with olive oil, fennel, garlic, and rosemary.
- Roast at 375°F (190°C) for 90 minutes.
- Let rest for 10 minutes before slicing.
- Serve with roasted vegetables.
Notes
Add a splash of white wine for basting.
