  • 1 lb veal cutlets pounded thin
  • 1 cup breadcrumbs

Coating

  • 2 eggs beaten
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions
 

  • Dip veal in eggs, then coat with breadcrumbs.
  • Heat butter and olive oil in a skillet, fry cutlets until golden, 3-4 minutes per side.
  • Drain on paper towels.
  • Serve with lemon wedges and arugula.
