Baingan Bharta

Indian roasted eggplant mash with spices and tomatoes.
Ingredients
Vegetables
- 1 large eggplant
- 2 tomatoes chopped
- 1 onion chopped
Spices
- 1 tsp cumin seeds
- 1 tsp garam masala
- 2 tbsp vegetable oil
Instructions
- Roast eggplant over an open flame or in a 400°F (200°C) oven for 20 minutes, then peel and mash.
- Heat oil in a pan, add cumin seeds, and sauté until fragrant.
- Add onion and cook until golden, then add tomatoes and garam masala.
- Mix in mashed eggplant and cook for 10 minutes.
- Serve with roti or rice.
Notes
Add green peas for extra texture.
